Scalloped Sweet Corn

I always save some of summer’s sweetest corn for this dish. I cut it from the cob & store it in the freezer for a taste of summer in the winter. Scalloped Sweet Corn is a great side dish for Thanksgiving, Christmas or when you’re craving some kind of comfort food.


I paired it with grilled steak, mashed yams, and roast asparagus for our Christmas dinner. It‘s a meal that doesn’t require a special occasion to eat but the scalloped corn will make it special anytime. With Covid restrictions we stayed home for Christmas and had a quiet dinner with just the three of us. We were able to drop by and visit my in-laws outdoors on the patio during the heat of the day. There is snow on the ground, but in New Mexico when the sun shines it feels a lot warmer than the temperature reads. We delivered a care package Christmas dinner for my in-laws of spiral sliced ham, scalloped corn, mashed yams & dessert. I wished we could’ve done the same for my parents but they live 7 hours away. I haven’t seen them since last Christmas but wIth regular phone calls and emailing lots of photos we’re staying connected.
