I’ve been on a Ricotta Pancake kick lately and thought I should give Ricotta Waffles a go. I added cornmeal for that crispier waffle texture. They were a family hit!
I always find pancakes & waffles filling for breakfast but then I’m hungry halfway through my morning. With the additional protein from the Ricotta, it’s enough energy to last all morning skiing. And I love how light & fluffy the Ricotta makes pancakes and waffles.
