Banh Mi(meatloaf) Sandwich

A delicious Vietnamese sandwich served on a baguette with fresh herbs, sliced peppers and cucumbers and Sriracha Mayo.


Banh Mi

There's fantastic Vietnamese food in Albuquerque and my favorite Banh Mi place is Banh Mi Coda. They bake their baguettes daily and have a plethora of fillings to choose from. I usually get the Banh Mi Xiu Mai (Vietnamese Pork Meatball) when I'm in the neighborhood, which isn't that often so I decided to make my own version when I'm having a craving.

Instead of making meatballs I make a meatloaf, because what is a meatloaf but a giant meatball? As a caterer, I can't tell you how many meatballs I've made, let's just say thousands. So at home, I'm all about making life easier. The meatloaf slices up perfectly for sandwiches, and works better than a meatball on a sandwich, if you ask me.
