Peaches & Sweet Corn

It's a labor of love when Summer's bounty is ripe for the picking. This summer I've made 9 quarts of apricot jam. I've peeled two cases of fresh roasted New Mexico Green Chiles to put in the freezer, and now it's time for peaches & corn. So, with the 2 cases of Colorado Peaches & one case of Sweet Corn, I have made Grilled Peach & Sweet Corn Salad, Corn Salsa, Elote, Peach Coconut Ice Cream, Peach Ice Cream, & Peach Cobble, and managed to freeze 5 quarts of sweet corn and 4 quarts of peaches.

So while peaches and sweet corn are still in season, treat yourself to a grilled Peach & Sweet Corn Salad.

I was very fortunate to put this together entirely from local farms. I have a neighbor with a greenhouse growing the tomatoes, basil & cucumber. The goat cheese came from another neighbor who sells goat milk, goat cheese & eggs. And peaches & corn came in the back of a truck from Colorado to the village of Questa, New Mexico, 12 miles away, the nearest town from our house. Since the pandemic my grocery store runs have been few & far between. I've always tried to get as much food as I can from my neighborhood farmers but my busy catering schedule made it hard to make the rounds, I found it was often easier to make one stop at the grocery store to get everything after work. With the catering season cancelled due to the pandemic, I have a lot more time on my hands. I have a regular supply of eggs, milk, beef, chicken, goat cheese & vegetables in my neighborhood. And, then there's apricots, cherries, plums & apples as they come into season. I've had the time to grow some herbs & vegetables at home, too. The slower pace suits me.
