Orange Cardamom Ricotta Pancakes

These light fluffy pancakes with the pop of citrus and cardamom are a true delicacy.

This was my first time making ricotta pancakes, most of the recipes you google have lemon in them, but between the lemon tart I recently made and my husband making Paper Plane Cocktails for New Year’s Eve, we’d used all the lemons. I had one orange in the fruit bowl, zested and juiced it and added some cardamom and my new favorite pancake was born.

I‘m a breakfast eater, I have no idea how some people are able to start their day with just a cup of coffee and no breakfast. I need to break my fast with an ample dose of protein. These pancakes really do the trick with eggs and ricotta, there’s enough protein to get me going. Click on the caption in the photo for the recipe. I thought I should mention I used white spelt flour but I didn’t specify that in the recipe. Spelt flour is interchangeable with all purpose flour. This recipe should work with a gluten free flour blend, also. I highly recommend Orange Cardamom Ricotta Pancakes for the next time you’re making pancakes. Enjoy!
