Lemon Risotto with Mint & Pea Pistou

Spring has sprung and I am ready for lighter zestier tastes. I loved all the braises and stews (and snowy ski days) of winter but I think everyone is happy to see the daylight stretching a little longer with each day. Fresh herbs and lemon always make things taste light and fresh. The pea pistou is a puree of sweet peas, mint, parsley, lemon and olive oil, with a little honey and kosher salt to finish it. The smokiness of the crisp pancetta, and parmesan in the risotto makes this dish hit every part of your taste buds.
Risotto does require some attention, stirring and adding warm broth, being careful not to overcook. But, it only takes 20-30 minutes so the inability to walk away from the stove is brief, and well worth it.
