Homemade Granola with Walnuts, Raisins, Chia Seeds...

And coconut, cinnamon, & ginger. Granola inspired by raiding the pantry.


Homemade Granola

With everyone spending more time at home, I find myself spending more time in the kitchen. As I was digging through the pantry looking for some baking inspiration I realized I had three bags of oats. So, granola it is. This recipe came together because this is what was in my cupboard. But, feel free to exchange walnuts for pecans or almonds, raisins for cranberries, chia seeds for sesame seeds... you get what I'm saying.

We love granola at our house but we actually eat it more as snack or dessert option than we eat it for breakfast. Last night's dessert was yogurt, granola and a few extra fresh berries.


When making granola, mix the dry & wet ingredients together until well coated. Spread on a baking sheet and stir it a couple of times while baking. That way the edges don't burn and it browns evenly.

I'm hoping to do a little more recipe posting for everyone at home trying not to climb the walls and looking for something to bake/make. I love seeing everything my friends are making on social media. I've seen some great posts! We're all in this together.
