Tart Cherry Vanilla Bundt Cake

It's cherry season, and if you don't have cherry trees hopefully you know someone who does.





Tart cherries are my absolute favorite for baking! I have a hard time finding them in stores, fresh or frozen. So when my friend texts and says they have more cherries than they know what to do with, I'm there. But, picking is only the beginning. Processing the bounty is satisfying but arduous. My teenage son luckily has some friends visiting so I pull out the pitter and soon with my Tom Sawyer charms the boys are curious enough about the pitting contraption that they are cranking away, pitting cherries covered in cherry juice with smiles on their faces. When it's not cherry season, I use dried tart cherries. Dried cherries have a more intensified flavor so when using in place of fresh, I cut the amount in half.


Tart Cherry Vanilla Pound Cake

This is a perfectly sweet and sour pound cake, and the combination of butter and yogurt make it moist. It's delicious as is or with a scoop of vanilla ice cream. It makes a great coffee cake or if you're like me, tea cake. Bundt cakes travel well so take one to your next potluck, picnic or brunch party.
