Calabacitas Casserole

In New Mexico, Calabacitas is a common side dish to any meal, typically squash, corn & green chile are combined & sautéed in a skillet for the New Mexican Calabicitas dish. Here I make it into a casserole.
The Calabacita Squash grown in New Mexico has a light green skin and is round in shape, the flesh is like a zucchini. You'll find it in New Mexican supermarkets when it's in season in summer & early fall. Which is also when the green chiles & corn are ready for harvest, too, making it an inevitable combination. But, you'll see the Calabacitas dish made just as often with zucchini. It's a little reminiscent of Succotash, a Southern dish of corn & lima beans.
This Calabacitas Casserole has now become one of our favorite creamy corn comfort food side dishes and it's taken the place of corn pudding at the Thanksgiving table. I also like to make it in summer when zucchini is coming out of your ears and you've had as much zucchini bread as you can stand.
