Apple & Fig Jam

Apples are in season here & they pair nicely with fresh figs in this simple spread that is delicious as a sweet or savory condiment.

In a medium sized saucepan combine 3 cups cored, peeled apples cut into eighths and 1 pint of fresh figs, stemmed & quartered. Add a teaspoon of cinnamon, 2 tablespoons fresh lemon juice & a tablespoon of water. Simmer on low, apples should release some juice but feel free to add another tablespoon or 2 of water if fruit is sticking to pan. When fruit starts breaking down, stir in 2 tablespoons of honey & a pinch of sea salt. Once incorporated, and fruit has turned to jam, it's ready to serve. Spread it on toast or a grilled ham & cheese sandwich. We love it on a Brie Quesadilla.
